Easy Cinco de Mayo Menu

This week we are celebrating Cinco de Mayo. Cinco de Mayo is the Mexican Independence day, celebrating the day Mexico declared itself independent of Spain. So this week try these easy, tasty, quick and low fat versions of some Mexican favorites.

Salsa Fresca {Fresh Salsa}

In a food processor just toss in, all rough chopped.

2 Green Onions


1 Lg tomato, seeded


2 Cloves garlic


1 Jalapeno Pepper {remove seeds if you donŽt like really spicy}


Bunch Cilantro


Zest and Juice of one Lime


Red Onion


1 Tsp Cumin


2 Tbsp Water


Salt and Pepper to taste


Turn on Processor and process until almost a fine texture. Refrigerate for one hour or overnight, serve with chips or on tacos, below.


The Ultimate Guacamole

Ingredients YouŽll Need:


3 Avocados, slightly firm to the thumb


1 Fire Roasted Jalapeno {fire roasting instructions below}


1 Tsp Cumin


Zest and Juice from 1 Lime


1 Tomato, seeded and diced


2 Green Onions, thinly sliced


Red Onion, diced


1 clove Garlic, finely diced


2 Tbsp Sour Cream


a bunch cilantro

Salt and Pepper to Taste


Dice onion, tomato, green onion and garlic, and cilantro place in mixing bowl.

To Fire Roast Jalapeno: Using your stove top and a pair of tongs, place jalapeno into and over fire until it blisters and turns black all around, DO NOT PLACE FACE OVER PEPPER. Than dice and add to bowl once cooled, usually do this step first.

Remove seed from avocado, spoon out avocado meat and place halves on cutting board. Dice one and a half of the avocado meats the other one and a half smash with the tines of a fork. Place all in the bowl, add Lime juice and zest over avocado to keep from turning color. Add the 2 Tablespoons of sour cream, cumin, salt and pepper. Mix until well blended, serve with chips or on tacos below, keep unused portion in fridge for up to 3 days unless Guacamole turns color.


The Ultimate Turkey Tacos

YouŽll Need:

2 pounds ground white meat turkey


4 oz can Fire Roasted Chilies and juice, diced


1 Jalapeno, seeded and diced


1 Package taco seasoning and 2/3 cup water


Onion, diced


Tsp Ancho Chili Powder


Place 3 Tbsp olive oil in skillet and cook turkey and onion until turkey is browned and juices run clear.

Add the taco mix, water, chilies and juice from canned chilies, Ancho chili powder, cook until water is absorbed, following seasoning package directions.

Serve with warmed tortillas, Place fresh yellow corn tortillas over flame on stove top until warm and a bit charred.

Place meat, lettuce, black olives, cilantro, shredded cheddar or 4 cheese , salsa fresca and guacamole {from above} into warm tortilla and enjoy. If you do not like or use guacamole serve with Lettuce, Tomato, Black Olives, Cilantro, Onion.

For Vegetarians, follow above recipe just substitute the Turkey with plain Boca or Garden Burger brand burgers and break them up in the skillet. You can also use any meat substitute you prefer and enjoy.

Saqqara has been writing since the sixth grade. She was editor of her high school newspaper, laying up and writing the final copy. She moved on to write Sports pieces and interviews with sports celebrities for a small local newspaper as well as gardening and healthy living tips for a local gardening magazine.
