Nitrous Oxide Cream Chargers – Whipping up a fuss - ???
Any cream that has over 29% fat may be used as whipping cream.
When whipped, the cream has around double the volume due to the gas being trapped inside fatty droplets.
Nitrous oxide is the gas that is used in most commercial pre-canned whipped cream, and is also used in nitrous oxide chargers, that are used with cream whippers (like the one in the photo)
The vast majority of people in the catering trade do say that freshly made cream tastes much better than canned whipped cream.
We tried the blindfold test with the guys and gals in our office, but it was a pretty even split between the freshly whipped, and the canned variety…
Most high class restaurant owners do say however that any true connoisseur can tell the difference straight away, and many stated that they would not be caught with a can of whipped cream in their hand, and would sack any of their chefs caught with one! – Those are pretty strong words given the temperament of most chef´s these days!
So, I guess mere tasteless minions like me will just have to take the posh nosh restaurant owners words for it! – I do have to admit, if I had the choice, I would rather be served freshly whipped cream if I were paying for a decent meal!
During our research, one of the girls in the office found a rather tasty alternative use for nitrous oxide cream dispensers!
There now exists a brand of nitrous oxide chargers called ´Erotica´ – and the tag line of the product, and website selling the stuff is "Whip it on, Lick it off!" – We will leave the rest to your imagination, but suffice to say, when she read the quote out loud, there were lots of volunteers in our office for a new version of our previous ´blindfold test´ – Unfortunately she declined… stating that it´s not in her job description! – Ah Well! Nice try lads!
