How to Make the Most Wonderful Salmon on the Planet and Impress Your Guests!
Purchase 2-4 salmon fillets that are 2-3 inches wide and an inch or an inch and a half thick. I like to purchase wild salmon that still has skin on the bottom, but the type you choose isn't important. In fact, nothing about this recipe has to be rigid. You simply can't go wrong!
You will also need two regular-sized cans of petite diced tomatoes, 2 cans of artichoke hearts packed in water, a quarter cup of capers, a half cup of Greek olives, a bag of baby spinach, crumbled feta cheese, extra-virgin olive oil, garlic, salt, and pepper.
Select a large pan with a lid, and cook over medium heat. Add one tablespoon of olive oil and 4 cloves of garlic, peeled and sliced, or pressed. Do not let the garlic brown. After 2-3 minutes, add the canned tomatoes, including the juice. Drain only one of the cans of artichoke hearts but cut the contents of both into halves or quarters. Stir in with the tomatoes, oil, and garlic. Let this sauce heat up until it's bubbling.
While the tomatoes and artichokes are hanging out, slice the Greek olives in half, lengthwise. Drain and measure out a quarter cup of capers. Add the capers and olives to the sauce as it continues to bubble softly.
When the sauce has slowly bubbled for 6-7 minutes, place the salmon fillets on top, skin side down. Sprinkle with salt and pepper. Cover and continue cooking on medium heat for ten minutes. While the salmon is cooking, steam or boil the spinach in a small amount of water. It only takes 2-3 minutes and it will wilt down significantly. Use two bags of spinach if you desire more.
In ten minutes, the salmon will be ready. To serve, place some drained, cooked spinach on a dinner plate and place the salmon on top. Cover with the tomato-artichoke sauce and sprinkle with a little feta cheese. This is a perfect example of the many free Mediterranean recipes that promote good health and encourage easy weight loss.
At this point, stand back and watch as you amaze yourself and your guests. In less than twenty minutes, you have prepared the most delicious salmon on the planet!
